Spontaneous Ouzo Emulsions Coexist with Pre-Ouzo Ultraflexible Microemulsions

Even in the absence of surfactants, polymers, or particles, spontaneous emulsions produced by dilution with water can be stable over days. This “Ouzo effect” used industry is obtained rapid from an identified “pre-Ouzo” domain composition where weak aggregates are present: nanometer-sized clusters covered a surface layer enriched hydrotrope such as ethanol. In these systems, Ostwald ripening not effective destabilizing mechanism. Using situ autodilution small-angle X-ray scattering (SAXS), we follow morphological transitions occurring ternary mixture water/n-octanol/ethanol throughout monophasic and biphasic regions. allows for first time online characterization multiscale coexisting microstructures. Small-angle neutron (SANS) profiles on metastable well phase-separated samples complete SAXS data, taking advantage contrast variation via isotopic substitution. After crossing phase boundary into two-phase region, phases both solutions structured at nanometer scale when emulsion stable. The transition single to two asymmetric around plait point. When initial concentration below minimum (MHC), emulsification failure occurs, i.e., cream within seconds. Beyond MHC, low interfacial tension between fluids results Laplace pressure 100 Pa, explaining puzzling resilience universal mechanism ripening.
